What is yerba mate? The complete beginner's guide
If you have ever seen footballer Lionel Messi or pop star Shakira holding a strange cup with a metal straw — that is yerba mate. In South America it is drunk more than coffee, and in recent years it has been rapidly winning over Europe too. In this guide we explain what yerba mate actually is, what science says about it, and how to start drinking it in Latvia.
What is yerba mate?
Yerba mate is a drink made from the dried leaves and fine twigs of the South American holly tree Ilex paraguariensis. This evergreen grows in the subtropical forests of Argentina, Paraguay and southern Brazil — and only there. Just as true champagne comes from Champagne, true yerba mate comes from South America.
Unlike regular tea (Camellia sinensis), yerba mate belongs to an entirely different plant family, which is why its taste and effect are different too. The flavour is earthy and grassy, with a light bitterness and a smoky finish — a little like green tea, but with more character.
In Argentina yerba mate is the national drink by law, and the average Argentinian drinks around 100 litres of mate a year. It is more than a tea — it is a social tradition where one gourd is passed around a circle of friends.
What is in yerba mate? The science
Yerba mate is one of the most studied plant drinks in the world. A comprehensive scientific review published in the Journal of Food Science (Heck & de Mejia, 2007) identified more than 190 active compounds in yerba mate. The key ones:
- Xanthines (natural stimulants). Caffeine (~78 mg per cup — similar to coffee), theobromine (also found in cacao) and theophylline. This combination delivers what mate lovers call “clean energy” — alertness without coffee's jitters or the sharp crash.
- Polyphenols and chlorogenic acids. Powerful antioxidants, present in higher concentration than in green tea. Research (Bracesco et al., 2011, Journal of Ethnopharmacology) shows mate polyphenols protect cells from oxidative stress.
- Saponins. The compounds behind mate's signature bitterness, linked in studies to anti-inflammatory properties.
- Vitamins and minerals. B vitamins, vitamin C, magnesium, potassium, manganese and zinc.
Benefits studied by science
Honestly: yerba mate is no miracle cure, and we only lean on what the research shows. Here are the main areas science has studied:
- Energy and focus. The caffeine–theobromine combination improves alertness and reaction time. Many mate drinkers report steadier energy over several hours — without coffee's crash.
- Metabolism and fat oxidation. A UK study (Alkhatib, 2014, Nutrition & Metabolism) found that taking yerba mate before moderate exercise increased fat oxidation during the workout by ~24%. That is why mate is popular among athletes and fitness enthusiasts.
- Antioxidant protection. Mate's antioxidant capacity exceeds green tea in several laboratory measurements (Bracesco et al., 2011).
- Cholesterol. Clinical studies have observed a moderate reduction in LDL (“bad”) cholesterol in regular mate drinkers.
Important: like any caffeinated drink, mate is not recommended in large amounts for pregnant women or people sensitive to caffeine. We suggest no more than 3–4 cups a day.

How to brew yerba mate
The traditional way (mate + bombilla):
- Fill the gourd (mate cup) about 2/3 with dry mate
- Tilt the cup so the mate forms a slope on one side
- Pour a little lukewarm water into the empty side and insert the bombilla
- Top up with water at 70–80 °C (never boiling — it makes mate bitter!)
- Drink and refill — one serving lasts 8–10 infusions
